Apple Pie, Applesauce, Apple FUN!

Grandpa Jay needed some help with his apples, so we picked a few...thousand. I haven't ever canned before and didn't know really how many we'd need. I always figure more is better...not anymore. I wish I'd thought to take pictures of the massive amounts of apples we had, but I was so disgusted that I couldn't...
If you can imagine, I had 3 32 gallon bins that you put away clothes and holiday decorations filled to EXPLODING with apples. Everytime I moved the apples we had to clean them up and put them back in the bins...
I canned with my grandma on Monday and Tuesday (she kept canning even after I had to leave for work, bless her!) and went through 1/2 of 1 bin...I left my grandparents with 12 quarts of apple pie filling, 5 quarts of apple sauce, 3 pints of applesauce and about 6 jam jars full of applesauce. PLUS, Karalee had given me a box of peaches and pears, so I also had 3 quarts of pears and 5 quarts of peaches. Wow...I was only 1/2 way through the 1st bin. Grandma graciously agreed to take 1/2 of the 1/2 bin left...thanks.
The rest of the week wasn't condusive to canning...we had Shawn's Galbladder surgery on Thursday and Lula's official adoption at the courthouse on Friday! Congrats Allreds! So, I set up canning Saturday and invited my mom and sisters to join in the apple fun! It was a success and we now have no apples in bins, just lots of apples in jars. :)
A few pictures, the kids wanted to help for a minute while I was setting up, though it didn't last long...just until they realized it was work...oh well.

Coring, peeling, and slicing...

Making applesauce...

Drying apples!
Apples, apples, everywhere...we are too sick to eat!

Way to go! Fruit always taste better when you can it...especially yourself. What an accomplishment! (I speak like I'm an expert, which I'm really not. But the pears and peaches we canned are so YUMMY!)
